Ancient variety typical of the plain of Lucca. Produced in medium-textured soils and close to waterways. It has a red color with streaks from marc to black. It has a very soft and floury texture, an intense aroma and a strong flavor.

Traditional dishes such as pasta and beans, Zuppa alla Frantoiana, Farinata (red bean soup, black cabbage and corn flour), spelled and bean soup with garlic, sage, tomato and sausage, in paired with steak or with cod and shrimps.

Soak for 8 hours. Cook for 1 hour (in a pressure cooker 20/25 minutes from the moment of the whistle).
