The fine RB parboiled rice is grown in the province of Vercelli and Basso Pavese. Parboiled means when a variety of rice undergoes the parboiling process. This treatment is among the oldest that history has handed down: the process from which parboiled rice is obtained consists of a hydrothermal treatment of the rice still coated with the husk (external coating of the grain). Brown rice is partially cooked in water at more than 100°C, so that the starch present in the grain gelatinises. The rice thus treated is subsequently dried and processed according to the usual procedure for normal rice. The grain of translucent RB parboiled fine rice, slightly amber in color, always remains compact when cooked with well separated and consistent grains.

Parboiled fino Rb rice can replace white rice in almost all dishes. It cooks evenly both inside and outside the bean. It is the 'friendly rice in the kitchen' because it easily forgives a few more minutes of cooking therefore it allows for less attention. It can be cooked, stored in the refrigerator and then reheated for consumption. It is suitable for risottos, pilaf, salads and side dishes.

Cook the rice until RB parboiled in water considering one part rice to three parts water. Once boiling, add salt to taste and finish cooking over moderate heat for about 15 minutes.
